Modern Mexican Cooking Class – May 14, 2015

Mexican Street Corn #1822 8-14What is Modern Mexican cuisine?  You may know the names of these famous chefs.  Bobby Flay, Susan Feniger, Mary Sue Milliken, John Rivera Sedlar, Mark Miller, Rick Bayless,…they kind of started a movement. I call it the Modern Mexican movement.  It’s more than Southwestern cuisine or TexMex.  We’ve started to incorporate the Mexican flavor profile and ingredients into whatever we are cooking today.  Chiles of all kinds, corn, lime, cumin, agave, cocoa.  We owe this delicious food to our ancestors who brought them over the border and are now forever lodged into the American palate.  With the creativity of chefs and home cooks alike, we now have many creative Mexican dishes. sophisticated dishes…way beyond the combination plate you’ve eaten at your local Mexican joint.  Come learn some of the new Modern Mexican dishes that have emerged and add them to your repertoire.
