Apple Cinnamon Cake

This is one of those old fashioned desserts from my childhood. It is great to make when autumn apples are fresh.Choose a tart red apple, like Honeycrisp, Gala or Pink Lady. Bake it in a 9 x 13 pan and cut into squares. Servewith vanilla bean ice cream or whipped cream and enjoy!

Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups apples peeled, cored and diced (4 large apples)
  • 2 eggs
  • 1 1/2 cups sugar
  • 1/2 cup canola oil
  • 2 teaspoons vanilla
  • 1 cup walnuts roughly chopped

Instructions

  • 1.Preheat oven to 350º. Mix dry ingredients together and set aside
  • Prep apples. Peel, core and dice.
  • Whisk eggs in a large bowl. Then add sugar, oil, vanilla and mix. Add the dry ingredients and stir just until incorporated. Fold in walnuts and apples.  Pour into a greased and floured 9 x 13 pan and smooth out the top.
  • Bake at 350° for 40-60 minutes or until a toothpick inserted comes out clean.  Do not underbake.
