Cucumber Ribbon Salad with Goat Cheese & Pepitas

I love the look of cucumber ribbons. So elegant and artsy. Marinating the thin slices you get with a vegetablepeeler and the vinaigrette adds so much flavor. The goat cheese and pepita garnish add a touch of elegance to asimple dish.

Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 2 cucumbers
  • 1/4 cup fresh mint chiffonade
  • 1/4 cup fresh basil chiffonade
  • 3 ounces goat cheese
  • 1/4 cup pepitas pumpkin seeds

Instructions

  • Mix together all vinaigrette ingredients - vinegar, oil, mustard, salt and pepper.  Set aside.
  • Trim off ends of cucumber. Slice cucumbers lengthwise with a vegetable peeler to create long thin ribbons; Chiffonade mint and basil and place all in a salad bowl.  Drizzle with just enough vinaigrette to coat and let stand to combine flavors for 20+ minutes.
  • To serve, spoon cucumber mixture onto salad plate.  Add chunks of goat cheese on top and sprinkle with pepitas.
