La Cucina Italiana Cooking Class – September 13, 2018

When autumn arrives, so do all the squashes.  Some of my favorite recipes from La Cucina Italiana contain butternut squash, the king of the winter squashes.  In this year’s La Cucina Italiana cooking class on Thursday, September 13 at the Holy Nativity Community Hall, we will be making two squash recipes – a Gnocchi with a Butternut Squash sauce and a Baked Zucchini with Pancetta or Bacon.  We cross from an abundance of summer zucchini to the winter zucca recipes that you can enjoy all winter long from the zucca (or pumpkins) that sit in the fields as they ripen.

Gnocchi is one of those Italian dishes that you love to eat at a restaurant but never have tried making at home.  Learn to make a light gnocchi that you are going to love sauced with the beloved pumpkin sauce made from butternut squash.

Here’s what’s on the menu at our La Cucina Italiana Cooking Class on Thursday, September 13:

• Gnocchi with Butternut Squash Sauce –  Gnocchi con Salsa di Zucca
• Baked Zucchini with Pancetta or Bacon or Not – Zucchine al Forno con Pancetta
• Bucatini with Pork and Fennel Ragu – Bucatini al Ragu di Maiale e Finocchietto
• Whole Roasted Sea Bass with vegetables – Branzino al Forno con contorni
• Strawberry and Ricotta Tart – Crostata di Fragole e Ricotta

Patricia K. Rose, of Fresh Food in a Flash, will lead this hands-on cooking class on Thursday, September 13, 2018, 6:00-9:30 at the newly remodeled Holy Nativity Community Hall in Westchester. Once we complete the cooking, sit down and enjoy a meal you and your new friends made together with a glass of wine.
