Our annual Main Dish Salads Cooking Class on May 10, 2018, 6:00 – 9:30 p.m. is a great time to plan toward dining al fresco as summer moves in. In this class, you will learn how to make a classic vinaigrette in 5 minutes and learn how to build your own signature salad dressing from scratch. You will also learn to break down a head of lettuce in just a few minutes, making your salads fresher and saving you money compared to packaged salad mixes.
Recently, I served on the Hospitality Committee for the Culinary Historians of Southern California presentation by Barbara Fairchild, longtime Editor of Bon Appetit. We made the Classic Tuna Salad from Bon Appetit to offer during the tasting. I’ve made a lot of tuna salads in my day, but this tuna salad had a flavor punch that was so yummy, I kept wanting more, so we will be making the Classic Tuna Salad to go with our freshly cut lettuce.

- Grilled Chicken with Peach Salad and Blue Cheese Dressing from Sara Moulton’s Home Cooking 101
- Mediterranean Potato Salad with Za’atar, Olives and Artichoke Hearts from The Moosewood Restaurant Table
Patricia K. Rose, of Fresh Food in a Flash, will lead this hands-on cooking class on Thursday, May 10, 2018, 6:00-9:30 at the newly remodeled Holy Nativity Community Hall in Westchester. Once we complete the cooking, sit down and enjoy a meal you and your new friends made together with a glass of wine.
