Mango Lassi – an Indian Smoothie for Summer!

Prep 5 mins

It’s Mango Season!  When I found mangoes 4 for $1 at my local Von’s store, I knew it was time for Mango Lassis at our Indian Cooking Class.  Then I went to Camp Blogaway, where the Mango Board was one of the sponsors and I came home with six more mangoes just in time for my Cooking Class.  We went through all but one.  Yesterday I received seven more mangoes in a nice package from the Mango Board.  What to do with all these mangoes?   Well – I am planning to test a Mango Chili Ginger Cobbler for my June 14 Knife Skills Cooking Class, so bring it on!

With all the spices in Indian food, it’s no surprise that dishes include a lot of yogurt to tame down the spices.  So I tried to spice up our Indian Cooking Class with some fun by including Mango Lassis which added sweetness and fun to the class.

Hannah, Emily and Peter serving Mango Lassis

The team of Emily, Hannah and Peter all had a blast making up these Mango Lassis after learning the lesson on how to cut a mango, which I had just learned at Camp Blogaway.

Cutting Mangoes for Mango Lassis

The method is foolproof.  1) Slice the cheeks off the mango on either side of the pit.  2) score the “cheek” with four or so vertical and horizontal slices.  3) Scoop out the mango flesh with a large spoon.  It is diced and you are ready to add to the blender!

Here’s the recipe for delicious Mango Lassis – perfect for an Indian meal or just something refreshing, now that summer is finally here!
